Muffin Mondays!

As the days get shorter, my prime photo taking sunlight is decreasing and thus this week I have no photo to offer you to show off this week's delicious banana walnut muffins. So instead I hope you accept this reasonable facsimile. These muffins were so yummy, thanks to Big Chuck for requesting them and to the Baking Bits blog for the recipe. I slightly adapted it (as usual) and have included my version below.


Banana Walnut Muffins

Adapted from Baking Bits, originally Banana Pecan Muffins

2 large ripe bananas, mashed
3/4 cup sugar
2 eggs
6 tbsps butter, melted and cooled
1 tsp vanilla
1 cup all purpose flour
1 cup whole wheat flour
2 tsp baking soda
1/4 cup yogurt (use runny yogurt or mix with milk)
1 cup chopped walnuts


Preheat oven to 350 degrees F. Grease 12 muffin cups or line with paper or foil liners.

In a large bowl combine bananas, sugar and eggs, mixing well. Stir in butter and vanilla. Add flour, baking soda, yogurt and walnuts. Stir enough to combine. Pour into well greased muffin cups and bake at 350 degrees for 20 to 30 minutes or until done.
